Pasta and Chicken in Garlic Cream Sauce

Cook time: 10 minutes

Servings: 8

  • 4          slices bacon, cut crosswise into 1/2-inch-wide pieces
  • 3/4       pound boneless, skinless chicken breasts, cut into 3/4-inch pieces
  • 10        ounces (about 4 cups) farfalle (bow tie) pasta
  • 2 1/2    cups reduced-sodium chicken broth
  • 4          cloves garlic, minced
  • 1 1/2    teaspoons dried Italian seasoning
  • 1/2       teaspoon coarsely ground black pepper
  • 1          cup heavy cream
  • 1          cup grated Parmesan cheese
  • 3          cups baby spinach leaves
  • 1          cup halved cherry tomatoes, for garnish
  1. Place removable pan inside programmable pressure cooker. Using saute function, cook bacon, uncovered, until crisp. Use slotted spoon to remove bacon from pan. Drain bacon on paper towels. Leave 1 tablespoon drippings in pan; discard remaining.
  2. Add chicken to bacon drippings in pan in two batches. Using saute function, stir-fry chicken 2-3 minutes, or until cooked through. Use slotted spoon to remove chicken from pan. Repeat until all chicken is cooked. Press cancel.
  3. Stir pasta, broth, garlic, Italian seasoning and pepper into drippings in pan. Secure lid and set pressure release to sealing function. Select high pressure setting and cook 5 minutes. Press cancel.
  4. Allow pressure to release naturally 5 minutes. Move pressure release to venting function to release any remaining steam. Remove lid.
  5. Stir cream into pasta mixture. Using saute function, cook and stir, uncovered, until boiling. Boil, uncovered, about 4 minutes, or until sauce generously coats pasta, stirring frequently. Press cancel. Stir in chicken and Parmesan cheese.
  6. Place spinach and bacon in large bowl. Pour pasta mixture over top. Toss until combined. Ladle into serving bowls. Top each serving with tomatoes.

Cheesy Turkey Chili Mac

  • 1          tablespoon vegetable oil
  • 1          pound lean ground turkey
  • 1          cup chopped onion
  • 1          can (15 1/2 ounces) kidney beans, rinsed and drained
  • 1          can (15 ounces) no-salt- added tomato sauce
  • 1          can (14 1/2 ounces) diced tomatoes with green chili peppers
  • 1 2/3    cups reduced-sodium chicken broth
  • 1          tablespoon chili powder
  • 1/2       teaspoon garlic salt
  • 1/4       teaspoon pepper
  • 8          ounces (about 1 3/4 cups) elbow macaroni
  • 1/2       cup 2 percent or whole milk
  • 2          tablespoons all-purpose flour
  • 2          cups (8 ounces) shredded Mexican blend cheese
  • 3/4       cup plain fat-free Greek yogurt or sour cream
  1. Place oil in removable pan of programmable pressure cooker. Place pan in pressure cooker. Using saute function, heat oil until hot. Add turkey and onion. Cook, uncovered, about 5 minutes, or until turkey is no longer pink, stirring to break up. Press cancel.
  2. Stir in beans, tomato sauce, diced tomatoes, broth, chili powder, garlic salt and pepper. Stir in macaroni. Secure lid and set pressure release to sealing function. Select high pressure setting and cook 5 minutes.
  3. Allow pressure to release naturally 2 minutes. Move pressure release to venting function to release any remaining steam. Remove lid.
  4. Stir macaroni mixture. Whisk together milk and flour. Stir into macaroni mixture. Using saute function, cook and stir, uncovered, 1-2 minutes, or until boiling. Press cancel.
  5. Stir cheese into macaroni mixture until melted. Ladle into serving bowls. Spoon dollops of yogurt or sour cream on top.

Chicken and Wild Rice Soup

  • 1          cup shredded carrots
  • 1/2       cup finely chopped onion
  • 1/2       cup sliced celery
  • 2          cloves garlic, minced
  • 2          tablespoons butter or clarified butter
  • 4          cups chicken broth
  • 4          ounces (about 2/3 cup) wild rice, rinsed and drained
  • 1          teaspoon dried thyme leaves
  • 1/4       teaspoon salt
  • 1/4       teaspoon pepper
  • 12        ounces skinless, boneless chicken breast halves, cut into 3/4-inch pieces
  • 1          cup plain low-fat Greek yogurt
  • 2          tablespoons flour
  • 1/2       cup whipping cream
  1. In Dutch oven, cook carrots, onion, celery and garlic in hot butter about 2 minutes, or until tender, stirring occasionally.
  2. Stir broth, wild rice, thyme, salt and pepper into vegetable mixture. Bring to boil. Reduce heat. Simmer, covered, 40 minutes. Stir in chicken pieces. Return to simmer, covered, 10-15 minutes, or until rice is tender and chicken is done.
  3. In small bowl, whisk together yogurt and flour. Gradually whisk in cream. Stir into chicken mixture. Cook and stir over medium heat until boiling. Boil 1 minute. Ladle into bowls. (Family Features)

5 Ways for Parents to Become Savvy About Hidden Added Sugars

Children’s sugar intake a predictor of obesity, parents play a key role in management

Ask 10 parents how much added sugar their child consumes each day and there’s a good chance that at least 9 of them will have no clue or will underestimate it. In fact, research published in the International Journal of Obesity reported that 92 percent of the parents surveyed in the study underestimated the added sugar content in foods and beverages. The study also showed that kids are more likely to be overweight when their parents are misinformed about sugar in their kids’ diet. Since sugar intake is associated with an increased risk of being overweight and parents are a child’s nutritional gatekeeper, it essential that they know the ins and outs of sugar.

“Added sugars have infiltrated our lives in a pervasive way, making it crucial that parents know how to identify it and how much is too much,” says Dr. Nimali Fernando, a Fredericksburg, Virginia-based pediatrician who founded The Doctor Yum Project. “Without solid information regarding sugar intake, we may be setting our children up for possible health problems later.”

According to the American Heart Association, children should consume less than 25 grams of added sugar per day, which is equivalent to 6 teaspoons, and that children under the age of 2 should not have any sugar-added foods or beverages. They report that eating foods high in added sugar throughout childhood is linked to a higher risk of developing such diseases in adulthood as heart disease. It’s also linked to obesity and elevated blood pressure in both children and adults.

Childhood obesity has become a hot-button issue in recent years, as the number of children considered overweight and obese continues to rise, particularly among children age 2-5. According to a recent report in the New England Journal of Medicine, 57 percent of today’s children are predicted to be obese by age 35.

Parents are often confused when it comes to sugar intake with their children. Sugar that comes in the form of whole fruit is generally good, while added sugar is what parents need to really watch. Added sugars are those sugars that have been used by the food industry to enhance a food’s flavor. While a piece of fruit is a good choice, “fruit snacks” (the kind that come look like soft candy, for example) may not be, because of the added sugars. Even some foods that seem healthy may contain “hidden” added sugars, making it important for parents to get to know the terms and become label readers.

Here are 5 ways for parents to become savvy about the sneaky ways food companies add sugar to foods:

  1. Confusing food labels. Figuring out how many added teaspoons are in a recipe is not straightforward. First, food labels report sugar in grams. So remember this equation the next time you look at a label: 4 grams of sugar = 1 teaspoon of sugar. To further complicate things, food labels historically did not break down added sugar with naturally occurring sugar. So when we look at a label on a sweetened fruit yogurt, it’s often unclear how much of the sugar comes from natural milk sugars and fruit versus how much extra sugar the food company has added. Luckily, by the end of 2018 most food labels will be updated to break down total vs added sugar which will make reading a label more straightforward.
  2. Small portion sizes. A favorite food may not look like it has much sugar per serving, but if you look closely you may notice that the serving size is much smaller than what you may actually eat. Take the example of cereal. A typical serving size for cereal may be a half a cup or less than a cup per serving, which is much smaller than most people will actually eat (especially if it’s really sweet, because you are likely to eat more). If there are two teaspoons of sugar in a serving, but you can eat three servings, that 2 teaspoons quickly multiplies to 6 teaspoons, the recommended daily limit for a child.
  3. Sweetening with “healthier” sugars. Sweeteners like honey, agave and maple syrup may make a food appear healthier, but that doesn’t mean they actually are. While they may be more natural than refined sugar, manufacturers are still adding sugar to a food that may not need extra sweetness. Don’t be fooled by healthier sounding added sweetener ingredients.
  4. Using sneaky names for sugar. Sometime it can be hard to spot sugar in an ingredient list because there are so many code names. One nutrition source reports that sugar can be spotted with as many as 61 different names. Sugar’s many code names include: rice syrup, dextrose, maltose and barley malt, and high-fructose corn syrup. This is a great tactic, as companies are required to list foods by weight in decreasing order. By listing sugar with more than one name, companies may be able to bury sugar further down on the list, making it seem like there is less.
  5. Know the sneakiest foods. There are some foods that seem to have hidden sugars in them more often than others. Be aware of and read the labels carefully on such foods as granola bars, breakfast cereals, yogurt, fruit snacks, and juice. Juice is trickier because technically the sugar in juice is considered naturally occurring. However, it’s more like a processed food. There is nothing natural about a child drinking the equivalent of 5 apples worth of sugar. And when we drink apple juice, there is no fiber to help slow down the absorption the way there is when we eat an apple. Skip the juice and stick with water for hydration and whole fruit for fiber and nutrients instead.

“Childhood is where many of our food habits are formed, making it that much more important that we help our children learn to sensibly navigate the nutritional landscape,” added Heidi DiEugenio, director of the Doctor Yum Project. “The more we can help them learn better and healthier food habits now, the more they will benefit from those choices and habits into the future.”

New Effort Aims to Bolster Music Venues

As you nod along to a catchy tune over dinner or drinks with friends, you might not even think about the live music you’re enjoying. For many people, live music is simply part of the ambiance of their local bars or restaurants. For others, it may be the main draw. Either way, people often don’t give much thought to the price of that entertainment.

For small business owners, however, paying for a license for that music can be a major worry. While playing live music in a venue without a license is copyright infringement, creating potential liability for lawsuits seeking large amounts of money, it is often impossible for business owners to figure out which licenses to buy, for what and from whom. Despite the explosive growth in access to information of all kinds online, there is still not a single comprehensive and actionable database of music copyright ownership and licensing that exists today.

If a person wants to buy licenses for copyrighted music, they currently must sift through a sparse patchwork of incomplete databases – covering only some copyrighted works, like those maintained by the performing rights organizations (PROs) that license song performances. Those databases are often unhelpful and usually state that they can’t be relied on to be accurate or up-to-date. Business owners wanting to offer music to their customers are often not equipped with the tools necessary to make rational decisions based on opaque data.

This leaves business owners either guessing or forced to buy all of the licenses. Increasingly, venues like restaurants, taverns, wineries and hotels are walking away from hosting live musicians altogether. In fact, a 2016 industry survey by WineAmerica estimated as many as 32 percent of wineries throughout the United States have either canceled or are considering canceling their live music programs. This can put venue owners in a no-win position and leave them denying opportunities for new and upcoming artists to do what they love and discover new audiences.

Bipartisan legislation introduced by Rep. Jim Sensenbrenner (R-WI) may provide a solution to this problem. The Transparency in Music Licensing and Ownership Act would help establish a neutral, searchable, digital database of historical and current copyright ownership and licensing information, free-of-charge.

“Beverage licensees have been clear that their focus is on bringing transparency to the music licensing process and already support songwriters by collectively paying millions of dollars in licensing fees to PROs,” said John Bodnovich, executive director of the American Beverage Licensees trade association. “This is a bipartisan issue, affecting hospitality businesses in every town, city and state across America, and this bill is a sensible step toward a more transparent system.”

The proposed legislation is a step toward creating an open and accessible music licensing system, ensuring that venues can safely continue to provide live music for their patrons.

“Transparency is the only way for wineries to make sound business decisions when it comes to music,” said Tara Good, vice president of WineAmerica. “Music and live music performances play a huge part in promoting wine tourism and creating a memorable and unique experience.”

The new program features Thai takes on classic cocktails, using fresh herbs, housemade syrups and local ingredients to create a signature menu.
