The Driskill is proud to announce Christian Apetz as the new Executive Chef of the venerable hotel. Chef Apetz comes to The Driskill from the Park Hyatt Beaver Creek Resort and Spa, and takes the helm of the culinary team from Chef Troy Knapp, who recently moved to the Park Hyatt Washington D.C.

Chef Apetz has more than 22 years’ experience within the hospitality industry and has worked and traveled throughout the United States, giving him enviable first-hand experiences cooking regional American cuisine. His travels indulged his love of history and discovering new cultures, however his passion remains with Southern foods, flavors and traditions. At The Driskill, Chef Apetz combines his love of history and discovery to develop menus using products that are native to the Central Texas region and are farmed, raised, and harvested nearby

Chef Apetz is responsible for overseeing all aspects of the dining operations for the hotel’s two restaurants, The Driskill Grill and 1886 Café & Bakery; menu service for The Driskill Bar; catering and events operations; and in-room dining.

The Driskill Grill invites you to an intimate dining experience with wine and food writer Alan Tardi in celebration of his newly published book Champagne, Uncorked. The book chronicles Alan’s yearlong residence at the iconic Champagne house, Krug. The pages within unveil some of the highly guarded secrets of Krug as well as the history and inner workings of the region of Champagne.

This will be an innovative and interactive evening pairing each course with an exclusively curated selection of Krug Champagne accompanied with readings from the book. These Champagnes are rarely offered publicly, including a vintage comparison as well as a taste of the famous Clos de Mesnil.

Join us for what promises to be a most unforgettable evening featuring some of the best Champagnes in the world beautifully paired to intricate food in an iconic setting.

The Craft Series at 1886

Join us in 1886 Cafe and Bakery at the Driskill hotel for a casual, crafted evening.   Our culinary team, Chef de Cuisine Brian Contreras and Executive Pastry Chef Tony Sansalone, collaborated with 4th Tap Brewing Cooperative and created a dynamic menu for the local food and beer enthusiast.  For $40.00 per person you and your guests will enjoy four scrumptious courses paired with four featured craft beers.

$40 per person not inclusive of tax or gratuity. This will be paid at the event. 

Reservation Information

Reservations are required and seating is limited.  To reserve your seat for this great event, follow the steps below:

  1. Register above for the amount of seats you would like.
  2. Fill out the information and press send!
  3. Our team will call or email you to confirm your seat approximately two weeks before the dinner.
  4. On the day of the dinner, come to The Driskill and enjoy an amazing meal with awesome beer pairings.
  5. After you are finished eating, drinking and being merry, you pay the $40 per person bill (not inclusive of tax or gratuity).
  6. Make sure you ask your server how to pre-register for the next dinner!
